Very similar recipe to our artisan bread and is still a dense loaf, but has a thinner crust in a sandwich loaf shape. Made with either our Einkorn or Turkey Red HRW wheat. Has a milder taste than either our sourdough or HRS breads. 98% of ingredients from our farm.

Organic certificate applied for.

Ingredients: Either our Turkey Red HRW or Einkorn organic wheat, water, salt (Morton), organic yeast (red star)

HRW option:

The HRW (hard red winter) heirloom wheat variety we use is maintained on our farm and is a pre-Green Revolution wheat variety brought from Turkey in the 1800s (Turkey Red Wheat). Like all our flours, it was stone ground in small batches for freshness. Unlike white flour, it does not need to be enriched because the natural vitamins were never removed.

Einkorn option:

The Einkorn wheat is a spring variety we maintain on our farm. Many consider Einkorn not only an heirloom wheat, but also an ancient grain. Not having been hybridized 10,000 years ago as most other cultivated wheats, it has 14 chromosomes instead of the 42 chromosomes found in modern wheats.

PLEASE NOTE: We mill this in the same mill as our other organic wheats, corn, oats, etc.

The wheat used in this bread was grown, harvested, cleaned, stone milled and then baked on our farm
