FLOUR: Red Fife sifted
3 cup flour
1 ½ cup water
2 teaspoons salt
¼ teaspoon yeastMix ingredients then knead, with a kitchen-aid or by hand, for 5 minutes.

Let sit at room temperature for 2 hours, covered with a towel. Then sit in the refrigerator for at least 2 hours, covered. The dough can sit in the refrigerator for up to 7 days.
When ready to make bread, break off a softball size dough ball and flatten it. Sprinkle with a tablespoon of sugar or honey. Fold 5 to 10 times, and place into a well oiled loaf pan, flatten the dough out to the shape of the pan. Cover with a towel and let rise at room temperature for at least 1 hour. The dough won't quite double.
Preheat oven to 425 F. Bake for 15 minutes and then brush with butter or oil. Bake another 10 minutes.

This loaf bread is made from our HRS sifted wheat flour and makes excellent toast or light sandwiches. 90% of ingredients are from our farm.
Our HRS (Glenn) wheat has a strong flavor liked by many eastern Europeans, which also comes out in this bread. Some Americans don't care for this flavor.
Note: Glenn is NOT an heirloom varieity of wheat. It was released in Canada in 2001.

May 4, 2024 is our first day at the Green City market in Lincoln Park. Orders can be picked up during regular market hours on Saturdays during the market season. Please place your order by Sunday so we have time to mill and package your order, and deliver it to the market the following Saturday.

1 cup wheat berries
1 ½ cup milk
½ cup oil or applesauce
1 egg
3 tsp. baking powder
2 Tbsp. sugar
1 tsp. SaltBlend 1 cup milk with wheat berries for 2-3 minutes.

We run a delivery truck on Thursday afternoon/evening through Mazon, Morris, Minooka, Channahan, Coal City, Diamond, Carbon Hill and Goose Lake. For a flat delivery fee of $8, we can deliver any amount of product to your house, including baked goods.
Please arrange with us where the product should be left if no one is able to be home all of Friday afternoon/evening. Either via email (brian@qualityorganic.net) or phone. 815-584-1850.
Orders must be placed before 6:00 AM CST Monday of the week of the delivery date. Please place this item in your cart when checking out.
Starting June 25, we'll offer the same flat rate delivery on a monthly basis (Tuesday afternoons) in Naperville, IL.
